As a thank you to everyone for participating, I thought I'd share one of my all-time favourite recipes. Unfortunately, my youngest son now has a peanut allergy so we won't be enjoying this treat this year. But just because we can't indulge in this chocolatey-peanutey goodness, doesn't mean you can't.
Fair warning: You won't be able to eat just one of these bad boys and you probably won't make just one batch. Don't say I didn't warn you. :)
Chocolate Peanut Butter Balls
Ingredients:
2 cups peanut butter
1/2 cup butter or margarine
3 cups rice crispy cereal
1 lb (approx 450 g) icing/confectioner's sugar
600 g chocolate chips (approx. 2 bags of chocolate chips)
Directions:
1) Melt butter and peanut butter in a large saucepan.
2) In a separate bowl, mix together rice crispy cereal and icing sugar.
3) Pour peanut butter mixture over the cereal mixture and mix.
4) Form into 1" balls and chill for 1 hour.
5) Melt chocolate in double boiler or microwave.
6) Dip balls in melted chocolate and chill.
Depending on the size of balls you make, this recipe will make anywhere from 50 to 100 balls. You may need more chocolate if you make very small peanut butter balls. Once the chocolate has hardened, they can be frozen.

ReplyDeleteWe make the same Peanut Butter balls at our house for Christmas! My mom has been making them since we were little and now they are my husband's favorite! It's not Christmas without them!
ReplyDeleteI really like your mug rugs from your previous post too! You are a genius to do it that way! They all look so beautiful! Was it hard to cut it all up after it was quilted? I think I would have a hard time with that.
